We eat it at least twice a month Here is the recipe 3 cups cubed peeled sweet potatoes 1 1/2 cup baby carrots 1 small onion chopped 3/4 dried lentils sorted/ rinsed 2 tea spoon veg. oil 2 tablespoon Quality curry powder 1 teaspoon ground cumin 1/2 Teaspoon salt 1/2 tea spoon pepper 1 teaspoon finely chopped ginger root 1 clove garlic minced 1 can vegetable broth 2 cups frozen cut green beans 1/2 cup plain organic yogurt or plain soy yogurt In a 4 qt or bigger slow cooker mix sweet potato, carrots, onion and lentils. In a 8 inch skillet heat oil over med. heat add curry, cumin, salt, pepper,ginger root,and garlic cook only ONE min. stirring constantly. Add broth and add all to slow cooker.
