I made them last night and they are sure good. My meat eating Grandpaw even liked them. Annie Spicy Tempeh Tacos 1 cup tempeh, crumbled 1/2 cup water 1 red bell pepper, chopped 2 tsps. taco seasoning 1 tbsp. olive oil 1 cup cooked black beans, drained (I used pinto) 1 tomato, chopped 1 onion, chopped handful chopped lettuce 1/2 cup grated regular Jack cheese or soy cheese 8 whole wheat tortillas (warmed) Saute the tempeh in the olive oil for about 4 minutes. Add red pepper and onion and continue to saute for about 7 minutes more. Add the taco seasoning, 1/2 cup water and the beans and cook for about 5 minutes or until most of the water has evaporated.
