I also just purchased Vegan Cooking for One by Leah Leneman. I think I may have forgot to mention that hubby does not wish to go down this road with me at this point. I've concidered doing this for quite some time but never made the change until now. I am very new... coming up on 24 hrs now without eating meat. Threre were several factors in me finally deciding to do this. Most importantly is my health. I am currently overweight and borderline diabetic. I have no energy. I lost my dear father to colon cancer in April. He was the type that never went to a dr.. never had the suggested exams etc he should have had in order to prevent this from happening to him. I promised him before he passed away that I would see to it that my family and I don't go down the same path. Speaking of family, a little info on myself: I am married to a truck driver and am a stay at home mom to 4 kids, ranging in age from 5 to 14 yrs. We live in Illinois. I'm looking forward to meeting you all and also, learning from you! I have done that as well. I became a vegetarian for ethical reasons and secondarily for my health and that of my family. I started out thinking I would continue to eat fish. But that never happened. I went cold turkey and also cut out dairy and eggs as well. It has been a solid month now and I am still going! I feel wonderful. I will admit that it seems like you are eating a lot. As soon as I finish one meal, it is almost time for another. It has completely taken away a lot of my excessive snacking. It also has made a change in my palette too. I used to love extremely sweet deserts. Now I have a healthy taste for sweets and can appreciate not needing so much sugar anymore. And trust that if you are true to this lifestyle change, the weight will come off. I have lost 14 pounds so far and I haven't even begun to exercise yet. So, trust that this is a VERY healthy way of eating and being. I eat about 3 eggs per week, maybe 4 oz dairy. I would love to hear a common daily meals. It is rather boring and I have not ventured into a lot of the delicacies of the other posters. I keep it simple. I have a 15 and 4 y/o and the smaller one makes it a little more challenging. For instance during breakfast I would eat one of these…. Hot cereal (rolled oats or cream of wheat with Earth’s Balance, vanilla flavoring, and raw sugar (to taste). I may or may not add raisins and/or nuts to this. I also cook it with Soy or Rice Milk (half water and half milk). Banana and Strawberry Smoothie (bananas, strawberries, vanilla soy yogurt, soy/rice milk). This is my favorite meal outside of the hot cereals. And I usually add another fruit or two and some toast. Vegan cookies, bread pudding, rice pudding, muffins or banana cake…(This has replaced all snack foods that were very high in fat and very sweet.) These are all vegan versions and are nonfat or low in fat and healthy because it is made from all whole foods. It also takes the monotony out of breakfast. These also make great snack foods when the mood hits you. Granola…I made some homemade and it makes the best granola cereal around. It is so much better than store bought and you can control what is in it and the amount of sugar. It also doubles as a snack. Lunch and dinner are about the same. Tofu scramble has EVERYTHING that you need for a meal in it. I make mine with tofu, potatoes, rice (slightly fried), red peppers, onions, nutritional yeast, mushrooms, green beans, carrots, soy sauce, basil, parsley, and salt and pepper to taste. Veggie wraps are my favorite. I usually add spinach, roasted red pepper hummus, tomatoes sautéed mushrooms/green onions/red peppers, black beans, and nutritional yeast. I get the whole grain olive oil or the tomato basil whole grain ones. They are very tasty. Salad of your choice with homemade dressings. Szechuan green beans and sticky rice. Huge bowl of pinto beans with onions and a slice of cornbread. Beans and rice (an all time favorite!) I am eating more whole foods and hardly any of it is processed anymore. I am making everything from scratch. And by not eating any cheese, dairy, or eggs has made all the difference I believe. It makes my meal naturally lower in fat, unless I add olive oil, which is my favorite oil. But most of the time my food winds up being fat free. So, I have come to the conclusion that it is what I am eating that makes the difference. It seems I am constantly eating. Since I have replaced all my snacks too with vegan varieties I am no longer loading up on a lot of fat. I am eating way more fruit too. I am eating way more now than when I was an omnivore and it surprises me. I just gave you some ideas of what I eat. It is a bit more varied but for the sake of the readers I tried to keep it short.
