Guest guest Posted March 13, 2002 Report Share Posted March 13, 2002 Hi Michele, I've been eating raw during the day since early Feb., fruits and juice in the morning and a big salad for lunch. At night I eat cooked but vegan. It's going pretty well, but I do think I need to brush up my salad-making skills; my girlfriend is getting bored. We've added an organic low-fat vinaigrette for variety, even though it isn't raw; I figure if it keeps us doing it, it's still better than eating the crap we usually did at lunchtime. After the first two or three weeks, I went to the gym for the first time in several days and got on the treadmill. I found myself walking faster, on a higher incline, than I usually do, and barely breathing hard! That more than anything convinced me that I'm doing the right thing. But I do crave variety, without a whole lot of effort, so I'm interested in what others will tell you. What salads do you make now? I usually do a spinach/arugula/romaine mixture, with alfalfa sprouts, and then add either radishes, cauliflower, red/yellow/green bell peppers, or some combination of those. Once I brought cherry tomatoes and that was good; cucumbers are okay too. I've been a vegetarian since high school (can it be possible that it's been more than 10 years??!!). My kids and husband all have a healthy love and appreciation for vegetarian food, although they do get some non-veg stuff occasionally when we're out and about. I joined because I'm always looking for new ways to make family friendly veg food. My husband is latin-american, so foods with spice are very popular in our household! I'm also interested in spreading the vegetarian cause. I've quite frequently pointed people to the " 101 Reasons I'm a Vegetarian " in hopes that they will realize where their food comes from and what an impact their choices make on society and the environment.
