First of all, I want to say thank you all for your support in my new eating

habits.  This is all so new to me, and I really am trying to find new ideas on

how I can incorporate protein into my diet without eating meat.  I have been a

veggie now for a week tomorrow and there is still so much for me to learn.  For

instance, I've heard of tofu but have no idea what it really is used for, where

to find it, what kind of meals it is used in, etc..

 

 I have been looking thru some of the recipes as well in the links section. 

Tomorrow morning I am going grocery shopping and would love any suggestions you

have for me.. such as good sources of protein or anything else you think I may

want to try.    Thanks!

It seems nearly overwhelming, what to buy and eat, but it does get less

daunting. Tofu, small packages can be bought in the produce section of (my)

supermarket. It comes in soft and firm. I prefer the firm for making sandwiches,

a couple of slices between bread and seasoned with soy or Tamarri sauce. Chopped

and fried, it is a good substitute for scrambled eggs. Broccoli, green peppers,

brown rice, dried beans are all good sources of protein. Dark green veggies are

good sources. Honestly, protein is less of a concern that vitamin b12 and iron.

There you might want to consider supplements. Flax seeds ground in a coffee

grinder are a good source of protein along with helping your body absorb

nutrients.

      Six months ago I new nothing of this, I was nearly overwhelmed with a

vegan diet. Do some research and you will be fine. For instance a b12 deficiency

takes about a year to show up in a blood test. Good luck. Try the pinto beans

and season with garlic and horseradish, 1 tsp each, or two cloves for

a wonderful flavor in the beans and rice.
