Guest guest Posted June 30, 2008 Report Share Posted June 30, 2008 Hi, I was wondering if anyone in this group knows a good source of vegetarian protein which tastes similar to seitan or wheat gluten, but does not contain wheat or gluten. I haven't been able to find any in my local healthfood store. I am looking for a chicken or beef substitute to put in stir fried vegetables. I often use tofu, but I want to simulate the consistency of chicken or beef in my food. I have had some really good chicken wheat gluten protein in restaurants, but I am trying to stay away from wheat gluten. If anyone has any suggestions, please email me with links or leads. Or something like Quorn (which I have been unable to find where I am, but is from a fungus). Neither of these have grain or gluten. You could also try tempeh - it's also soy but it is fermented, invented by those clever Indonesians, and I really really love using it. It can be ground up (in a food processor) for 'ground meet' dishes, sliced, cubed, sliced, etc., and of course also marinated before using. While some kinds of tempeh have grain in them you can also get the kind that is all soy. Read the label. It is sometimes found in the freezer section of a health food store. Other soy products seem to be available - fake chicken, etc., fake ham, fish, bacon, beef, etc., but depending on brand could have grain in them. Read the ingredients carefully, of course. Oh jeeeeez, does any of this help???? Shout out if I've made a total idiot of myself and I'll try again, okay? Oh - and if anyone has suggestions to answer this question, please post to the group too? 'Do what thou wilt, but harm none'. Each individual is responsible for discovering his or her own true nature and developing it fully, in harmony with the outer world.
