Guest guest Posted July 8, 2008 Report Share Posted July 8, 2008 Hello all, I've had some success with freezing the tofu overnight and then cutting it up and stir frying it with spices the next evening. You have to press all the liquid out of it while it's still thawing. Slice it in to squares, season and stir fry it. Guest guest Posted December 27, 2008 Report Share Posted December 27, 2008 Paneer is a simple Indian, home-made fresh cheese made from cows milk. Heated milk is curdled with lemon juice (or sometimes a different acidic coagulant), and then the curds are filtered out with cheesecloth. In other words, it's made pretty much the same as tofu is made from soymilk. Tofu works well as a substitute for paneer in 'palak paneer,' I've found, except that it seems to be less chewy. Paneer probably has a chewier texture because of the milk protein casein.
