Regarding the paneer

Hello all,

 

I've had some success with freezing the tofu overnight and then cutting

it up and stir frying it with spices the next evening. You have to

press all the liquid out of it while it's still thawing. Slice it in to

squares, season and stir fry it.

 

The first time I made it this way for Palak Paneer my husband really

thought it was paneer.

Paneer is a simple Indian, home-made fresh cheese made from cows milk.

Heated milk is curdled with lemon juice (or sometimes a different acidic

coagulant), and then the curds are filtered out with cheesecloth. In

other words, it's made pretty much the same as tofu is made from soymilk.

 

Tofu works well as a substitute for paneer in 'palak paneer,' I've

found, except that it seems to be less chewy. Paneer probably has a

chewier texture because of the milk protein casein.
