Pine Nuts?

Hi,

 

We have 2 umbrella pine trees in our garden. They always shed loads of pine

cones but, for the first time ever, the birds are not being so quick at taking

all the seeds. So, my question is can these 'pine seeds' be used in cookery

or do they have to be a special tree variety to be safe to eat? They are very

expensive to buy so it would be great if I could harvest some myself.
