Hi Jan,

 

I don't know if you are looking for a " traditional " vegetable soup, or

something a little more exotic, but this is hands down my favorite

vegetable soup. When I first found it, I thought the raisins and

cinnamon sounded gross, but my habit is to make a recipe the first

time as is, and then make changes to it later if necessary. I'm so

glad I did! The raisins make this dish fabulous. I hope you like it too.

 

 

Moroccan Stew

 

1 onion, chopped

3 cloves garlic, minced

2 (14oz) cans no salt diced tomatoes in juice

3 cups shredded green cabbage

1/2 bell pepper, any color, chopped (I prefer red in this dish)

1 small zucchini, chopped

1/4 cup raisins

1 can chickpeas, rinsed and drained

2 stalks celery, chopped

1/4 tsp ground cinnamon

 

 

In a soup pot, saute the onion in a little water for several minutes,

until translucent. Add garlic and celery and saute for 5 more

minutes. Add rest of ingredients, stir, lower heat and simmer about

20 minutes, covered, until veggies are crisp tender. Serve.

Have you tryed Morocaan Harrai soup? It is very good and full good stuff

I have never heard of it, but I've found generally speaking they use a spice in

their food I don't like. I wish I knew the name of it.I mean, there's a spice

that's commonly used, say, like curry is in Indian food.  I saw

a recipe yesterday for Portabella mushroom lasagna, and it looks so good! I'm

definitely going to try it sometime.

Thank you for sending this along.It looks good and I am going to save it. When

making soup, how long do you find generally it lasts? I ask because I'm a one

person-3 feline household. :)

Some people find they can keep it the better part of a week - but I put the

limit at four or five days. That's for the chunky ones. I tend to freeze the

pureed ones, so only defrost what I need for a meal (2 people).
