Guest guest Posted September 1, 2008 Report Share Posted September 1, 2008 This is a vegan variant of a recipe already in the files - a dish requiring little preparation, ideal for unexpected guests, outside on the patio, the last (almost the first) summer day of the year. VEGAN RITJA-RITJA WITH VEGETABLES (serves 4) Ingredients: 1 block Tofu 1 medium-sized onion 1 clove of garlic 1 small can of tomato puree (70 gm) small quantity sambal oelek (chilli paste) or chilli powder 1 small portion root ginger 1 red pepper (optional) aromatic rice (e.g. Thai jasmine) seasonal vegetables (we used green beans) small quantity of bean sprouts Method: Finely chop the onion, garlic and root ginger and fry until brown in a small amount of oil. Chop and add the red pepper (if used) and fry until soft. Add the chilli and tomato puree, and stir for a while on a low heat. Wash a block of tofu, cut into slices and then fry lightly. Then cut into dices and add to the mixture. Warm through again. Cook the vegetables and when almost cooked add the bean sprouts and cook again.
