I tried this recipe yesterday, and yes it is a lovely quick way of putting

together a tasty and spicy (as spicy as you want it to be, of course) dish.

Since there were just the two of us, I halved the amount of tofu, onion, tomato

paste. I suddenly found I didn't have green beans or any other fresh green

vegetable suitable, so I quickly steamed up some snow peas with garlic and

ginger while the flavours in the tomato mixture were blending. I served the

tomato-and-tofu dish in the centre of a large platter and circled it with the

snow peas and some lovely heirloom tomatoes in quarters, and garnished with

chopped green onion and lime wedges. Delish!!!!!

Glad the recipe provided some sort of inspiration, though your version

sounds much more attractive also to the eye! I'd have found it

difficult to halve the amount of tomato paste because it was one of

those tiny cans we buy 6 at a time. Question of taste, I suppose!

 

Today it was the well-tried paksoi (bok choi)( & #30333; & #33756;) stir fry with

turmeric and other spices.

Well, perhaps my can was bigger! And remember, I halved the amount of tofu etc.

because of there being only two of us to the meal :) (I freeze small amounts of

'leftover' tomato paste, since I usually only need 1 Tbsp at a time or at most 2

until needed again.) Your recipe was delicious, and other than making a smaller

quantity and subbing snow peas for the green beans it was prepared as you wrote

it. You are a good cook!

Thanks! though I must say the great majority of my efforts never make

it to a list - you only see the successes!
