Recently, I have developed a gluten allergy at about the same time I was diagnosed with lyme. I have always been a cook, but with the lyme treatment, I have no energy to cook. So, with considerable expense, I have been eating out of the deli @ my local food coop to survive. On a good note, I made pancakes out of quinoa flour today. Even, my gluten eating husband said they were amazingly good.Right now, our local heirloom tomatoes are simply amazing. I eat them like fruit. At first our local coop just had local tomatoes.
