I buy it, freeze it then about 2 days before I plan to use it, I defrost it in the fridge, drain and squeeze the water out. This tends to make it " tougher " so I don't hear people say is is too " spongy " . Fried tofu is my fave. I buy and extra firm brand, I cut it up into cubes, a little bigger than bite sized. I use either sesame or vegetable oil and fry it on high heat. I like it quite fried but you could fry it to your taste. I add a teaspoon of an east indian garlic ginger paste, a little bit of veg broth, then either my vegetarian stir fry sauce, or some soy sauce. I usually add either broccoli, or spinach. To add some spice to it I have a chinese garlic pepper sauce that I add. Sometimes I add noodles but most of the time I cant wait to eat it so I dont bother. I buy a brand that I can only find at an expensive store, and is made nearby in Sacramento. Best for frying. I need to search here for some good curry recipes, I LOVE CURRY TOO.
