soup recipe please!

Now that we are shifting towards the winter months, I would like to start making

soups as a newly vegetarian. However, most soup recipes call for meat flavorings

or salts as a base. Does anyone have a recipe which they wouldn't mind sharing.

You can make almost any soup using a vegetarian version of the broth.

I always have McCormack boullion on hand. They make a chicken and beef

broth without meat. I think they are pretty good but I don't really

know what the " real " stuff tastes like so I could be wrong. So, to

start, just try substituting with a vegetarian boullion (even

vegetable will work in place of meat broth).

 

I also save my vegetable scraps in the freezer to make stock out of.

It's good too but the flavour is not consistent...depends what is in

the bag when I make the stock. It is a good base for hearty stew and

the like where there are a lot of bold flavours.

 

Here is a soup I tried when my CSA box had carrots with tops

(apparently they are good for you!!)...

It was delicious (the boys and my one year old nephew devoured it). I

made it without the cheese, used brown rice (a bit more than 1/2 cup),

and subsitituted vege-chik'n boullion. I would decrease the oil next

time I make the soup. Also if you use brown rice it will take longer

to cook so you might consider cooking on the side in some of the broth

and (while you saute the veges) then adding it.

Oh that soup using carrot tops is delicious - I made it (from that exact recipe,

with minor amendments, as you did yourself) last year (or was it early this

spring???) and we loved it. I put chopped carrot tops into a lot of soups now :)

 

Good tip about the veggie 'beef' and chikken bouillon - I should try them myself

sometime! They say that they are really convincing: it's funny I was afraid to

try them because I thought they just might be too convincing and that might put

me off LOL but I think I'm over that idea now!!!!

first a veggie and had these problems and worries. All help gratefully received

I got a bunch of turnips and greens in my CSA box. I'll be doing turnip greens

in the next day or two...I have heard to treat them like Collard Greens.

 

You might consider trying the vege chikk and beef. I think they are quite good.

I'm not sure how close they are to the meat version but they do season a soup

nicely.

I must have missed that one! I don't think I could have guessed it. I think we

must have been lucky here in Southern Ontario. Everything so far has been great.

Except for the corn...at least I haven't had much luck with it this year (there

are four cobs in my CSA box...I have my fingers crossed). Apprently the peaches

weren't great but I didn't notice. I though they were fantastic. I froze 30+

bags for wintertime smoothies.
