Cabbage Soup

 

1 head of cabbage, chopped

chopped onion

chopped carrots or 2-3 large parsnips

chopped red potatoes

3-4 vegan bouillon cubes (boil 1 cube per 2 cups water-directions on package)

celery seeds or celery powder

1 TBSP (or more) Tabasco Sauce

 

Spicy Chili

 

1 onion, chopped

1 green bell pepper, chopped

2-3 jalapeno pepper, chopped

2 15-oz cans black beans

2 14.5 oz cans Muir Glen Organic fire roasted tomatoes

1 cup corn kernels

pinch of sea salt

1 1/2 cup water

3 tsp garlic powder

1 TBSP chili powder

1 tsp cumin

fresh cilantro, chopped

 

 

Curry Veg Tofu Soup

 

frozen bags of cauliflower & broccoli

1 bag frozen chopped onions

3-4 vegan boulion cubes (1 cube=2 cups water)

1 block tofu, cubed

1 TBSP parsley, basil

2 TBSP (or more) curry powder

 

Masala Veg Soup

 

2 med onions, chopped

4 med potatoes, chopped

1 small frozen bag cauliflower

2 cup frozen cut green beans

2 mild chili peppers, minced

1 c frozen peas

3 tsp garlic powder, garam masala

1 tsp ginger powder, turmeric

2 tsp corriander

2 15oz cans lite coconut milk

1/2 tsp chopped cilantro flakes

 

Mediterranean Soup

 

2 large leeks, sliced

chopped celery

2-3 tsp garlic powder

1 TBSP rosemary

1/8-1/4 tsp red pepper flakes

2 c low sodium veg broth

4 oz green beans

3 med tomatoes, chopped

6 c chard leaves, chopped

1 bag frozen squash

 

Potato Pepper Soup

 

4-5 red potatoes, chopped

2 bags frozen pepper strips w/onions

6 c vegan bouilon cubes (or veg broth)

1/4 tsp pepper

1/2 tsp (or more to taste) ground cayenne

1/2-1 c flour mixed with 3 c soy milk

 

Squash Soup

 

1 butternut squash, chopped

1 large yam, chopped

1 onion, chopped

1 c celery, chopped

1 14oz can lite coconut milk

4 1/2 c veg broth

2 TBSP garlic powder

3 TBSP soy sauce

1/4 tsp curry, corriander

1/2 TBSP ground chili pepper

2 tsp ginger

 

Zucchini Squash Soup

 

chopped onion

2 cans diced tomatoes

2 bags each of frozen zucchini & squash

3 vegan bouilon cubes

4 tsp garlic powder

3 tsp oregano flakes

1/4 c parsley flakes

2 tsp red pepper flakes

 

The vegan cubes brand I use is called Rapunzel.  I seem to only find it at

Wegman's Grocery or a Natural Market. 

 

In our home in the cooler months you will find that our crock pot gets several

weekly

" work outs " !  :--)

I have several new soups to try out as well and if they are good I will be

passing them on.
