I also want to avoid soy products and go vegan as much as possible and am looking forward to learning alot here. Does anyone recommend a good cheese/dairy substitute that doesnt rely on soy? thanks. Be careful of the amount that you use in the beginning. We use it exclusively where the recipe asks for " soy sauce " I'm interested in soy replacements. I've read not so good things about fermented soy products (like tofu, and the tvp that they use in burgers), but soy beans are apparently alright. We make home made soy burgers using my mom's super secret recipe (it took my wife 7+ years to get it from her) -parag The two rules for success are: 1. Guest guest Posted December 1, 2008 Report Share Posted December 1, 2008 Braggs Amino is made from soy, though What it lacks is the wheat that is added to soy sauces. I use it now and then when I really need that taste, because it is less salty than regular soy sauce and not much heavier in salt than the 'lite' soy sauce. It's very good. Soy beans are said to be fine to use. Tofu and tvp are not fermented - indeed many health conscious people prefer the fermented products such as miso, tempeh and soy sauce and skip the unfermented ones such as tofu, tvp and those fake soy me*ts. If you were to ask me (and you didn't) I'd say that a little in moderation is okay of any of these, but that nothing is good in excess. I like the cheez on grilled cheez especially. I think they MIGHT use casein, though, so they wouldn't really be 100% vegan. You can make a great cheez sauce out of nutritional yeast to put on macaroni, baked potatoes, broccoli...well, anything really! I am working on a cheez recipe that avoids soy and gluten - it's okay as it is now for cooking _in_ things (like lasagna) - in fact it's darned good! - but I'd like to make it the absolute best. Frankly, I think others have been there before me - more power to them, I say - so perhaps I'm wasting my time. I only want this recipe for visiting friends who can't have the soy and gluten, poor darlings, not to post/use elsewhere. (Dunno what your AKM stands for, but if we have your AKM Cheez it could be A Kick-butt Mother of a Cheez, couldn't it? Whoops, time to have a little rest from this 'puter!) (And, may I say, if you're reading this and you HAVEN'T checked out the files, are YOU ever in for a treat! It's almost overwhelming, all the yummy recipes on there! I've been in kind of a I-don't-feel-like-cooking mood lately, but now I'm kind of inspired!) Back to my recipe...I can't seem to find it at home, but I'm still looking, because it's really good. (Well, *I* think it's really good, but I happen to love nutritional yeast...some people kind of have to get used to it, and some never quite do, which is a shame 'cause it's such nutrition-packed stuff.) Anyway, I hope to find it soon and I will then post it. It's not low-cal, but it's a great treat, especially in the winter when you NEED your mac-and-cheez! Recipes are still filed in whatever (closest) ethnic or regional folder seems appropriate but now also according to ingredient/s. It's fantastic! As for your non-low-cal cheez recipe, not to worry Everyone breaks out once in a while and some lucky people can do it even more often than others - right? A special rich treat recipe is so important to have! And me, I looooove nutritional yeast. (It's not to be confused with brewers' yeast, which I find a little bitter - although cyber pals tell me that there are some absolutely delicious brands of brewers' yeast too.) Perhaps it's a taste one learns to love as a vegan. Anyway, we'll look for your lovely recipe when you have time - okay?
