Oh good for you! it's a great feeling (and good for the animals and the planet too, of course). I was veggie for around 18 years and then decided, just around the start of this century, that vegan was the way for me. I wavered a bit about calling myself vegan (so easy to make mistakes, backslide, etc.), but I finally bit the tofu bullet, as it were. About the non-soy alternatives to dairy: Dunno. I used to be able to buy a rice 'parmezan' cheez that didn't have casein in it, but unfortunately it was discontinued from my local cheese shop so I have had to do without. I make up my own mixture of flavours to substitute now. Coincidentally, I am now doing a collection of recipes for my own e-cookbook that is vegan, omits fat/oil and salt (well, people can always add their own, right?), and also omits soy and gluten because of people with allergies. Me, I have no problem with either, but it's been a wild adventure to, first, find out how very much I depended on one or the other (unknown to myself) and, second, figure out how to avoid the soy and gluten altogether! I'm flying by the seat of my apron and creating new recipes on the hop! Great fun!!! The collection will be out Jan or Feb (nearing completion now), so Watch This Space (I've always wanted to say that!). Anyway, so pleased you're here.
