Some are made from a combination of soy protein and wheat gluten -- some of the Tofurky mock meats are made from such a combination. This month's Healthy Eating Catalog, a valuable vegetarian mail-order source, was just e-mailed out today. I also try not to use ingredients that are heavily or over-processed, so I kind of wonder about some of these things. And of course, out here they aren't available in the grocery stores.
