A local restaurant serves southern Indian food and they have it. If you have a favorite recipe, or can point to one already posted someone online, please post here. I'm looking for one that is comprised of my own individual spices, as opposed to a spice mix in a box, which I see on the shelf of my local Indian market. Also, there's a simpler Eggplant Bharta recipe above that AND there's an Eggplant Spinach Curry too, all clustered together. All recipes use individual spices rather than one of those 'curry' powders or pastes, so you should be happy. I also dislike using curry powders unless I've mixed my own and saved a little for adding, say, to a dip or vegan mayonnaise when in a hurry. Using a curry powder or jar of paste or sauce makes everything taste exactly the same - how boring! Hope these help. Otherwise, go to the Vegetables folder and look under eggplant. Good luck!
