Guest guest
I have made this for over 40 years Tabbouleh (tabouli) <http://www.gather.com/viewArticle.jsp?articleId=281474977047414 & nav=Explore#com\ ments> a much smaller version...cut down for a family size Tabbouleh (tabouli) 1 cup medium-grade bulgur 3 medium, firm chopped tomatoes 4 chopped scallions 3 cups finely chopped parsley 1/2 finely chopped mint (fresh) 1/2 cup olive oil Salt, pepper and lemon to taste bulgur, place in medium bowl with hot water just to cover with the juice of 2 lemons, and let soak until the Bulgar is absorbed. . Drain and fluff. Combine tomatoes, scallions, parsley & mint in large bowl. Add bulgur and toss. Whisk together olive oil, lemon juice and salt and pepper into a small bowl. Mix together all ingredients and serve cool inside a Pita Pocket. it is a better dish if left to stand overnight. then the next day freshen it up with more olive oil and fresh lemon juice Linda in Tennessee -- Linda in Tennessee http://lindatn37932.tripod.com/
