RECIPE: Blueberry banana oat muffins

These are fast, simple and excellent; reasonably healthy, too. This

recipe will also work with

strawberries, peaches, nectarines or sweet (but not maraschino!)

cherries in place of the

blueberries. Just cut the fruit in somewhere around blueberry-sized

dice.

Title:* *BLUEBERRY BANANA OAT MUFFINS

1 1/2 c flour--I like half white, half whole wheat

1/2 ts salt

1 c rolled oats

2 eggs

1/2 c sugar

1/4 c vegetable oil--I like canola

2 ts baking powder

1 ts baking soda

1/4 c. buttermilk (I think it makes them a bit lighter and more tender,

esp. with whole-wheat flour in the mixture, but use regular

or soymilk if you prefer.)

generous 1 c mashed banana

1 1/2 c. well-drained fresh or thawed blueberries, or as desired

 

In a large bowl measure dry ingredients. Stir to mix. Make a well in

center.

 

In a small bowl, beat eggs until frothy. Mix in oil, milk and bananas.

Pour into

well, adding blueberries last. Stir just until moistened. Batter will be

lumpy. If

it feels to thin or thick, add just a little dab of liquid or flour at a

time till it's

right..

 

Fill greased muffin cups 3/4 full. Bake at 400 degrees for 20-25 min.

Or if using mini-muffin tins, bake only about 12 minutes.
