Globe Artichokes

Hi,

 

Can anyone give me a tutorial on how to prepare globe artichokes? I know

that you have to remove the 'choke', but do I get to it by chopping off the

bottom and scooping it out or do I go in from the centre of the leaves etc. I

really do not have a clue about what to do. Any advice would be greatly

appreciated.

Just wash them well, cut the leaf-tips off if you want (it isn't really

necessary) and

simmer/steam them in a little water, covered.. The cookedchoke lifts

out easily, usually

whole, when you get that far in. And if a bit is left behind, it can

be scooped out easily

with a spoon.

 

Simple. . .which means you can concentrate on making the hollandaise

sauce. :)

 

Just don't serve wine with artichokes; they contain a chemical that

tends to make even a dry

one taste cloyingly sweet. I've heard there are a very few wines that

don't react that way

with artichokes, but I don't know if that's true, or what they are. .

..and since I no longer drink,

I can't go test 'em for ya. :) So: Iced tea with artichokes. Remember,

it's the house wine of

the Midwest. :)

here is a wonderful u-tube

demonstration on preparing the artichoke

she uses scissors to cut the leaves

i just use a very sharp knife and cut them all at once

on a cutting board
