curry powder?

I don't buy curry powder much; it was a British invention, and Indian

people don't

usually use it (though they do use garam masala, usually as a final

sprinkle.) They

make a spice mixture for each dish at the time they cook it, and they

toast the

spices first, which does lovely things for the flavor, not to mention

the aroma of the

house. :) That's what i do when I have time and energy.

 

When I can't, I use curry paste, preferably Patak's. It's SO much

better than the

powder--loads more complex, and it's rich and mellow. Gives nicer

color, too.
