Guest guest Posted February 11, 2009 Report Share Posted February 11, 2009 Hi Chris,  Salsify root is supposed to taste similar to oysters but I really couldn't say if that is true as I have no idea what oysters taste like. The closest thing I can come up with is white asparagus although the taste of the two could never be confused. I am speaking only of black salsify which is all I have ever seen here in the Netherlands. I don't know if there is a significant difference in taste between black and white salsify.  When you peel salsify make sure you immediately put it into water with a little bit of lemon juice. If you don't do this it will discolour very quickly.  As well as serving it with white sauce as you have mentioned, salsify is nice boiled or steamed and tossed with butter/margarine, salt, black pepper and chopped parsley. You can also mash it then top it with crumbs and/or a little grated cheese and heat under the grill. Topped with a vinaigrette dressing it is also nice cold as a salad ingredient or on an appetiser platter.   Cheers from Marie --- On Wed, 11/2/09, C259s <C259s wrote: C259s <C259s Salsify Wednesday, 11 February, 2009, 10:51 AM Can anyone describe the taste of this veg?
