It's been chilefied by me, but can of course be made without the heat. It's somewhat similar to chess pie, so, healthfood junkies, just look away now. <eg> -Begin Recipe Export- QBook version 1.00.14 Title: Chilefied GRITS PIE Keywords: Desserts, easy, potluck, chiles, Lammas, Mabon * 3/4 c. water * 1/8 tsp. salt * 1/4 c. quick-cooking grits * 1 tsp. to 1 Tbsp. cayenne, or to taste * 1/2 c. (1 stick) butter * 3/4 c. sugar * 2 Tbsp. all-purpose flour * 3 lg. eggs, slightly beaten * 1/4 c. buttermilk * 1 tsp. vanilla extract * one 9 " frozen pie shell, thawed * Sweetened whipped cream and fruit for garnish, optional Preheat oven to 325 F. In a small saucepan, bring water and salt to a boil. Add grits and cook 4 minutes, stirring constantly. Add butter and cook one additional minute. Set aside and cool slightly. In a small bowl, stir together sugar, flour, cayenne, eggs, buttermilk, and vanilla. Slowly stir into cooled grits. Pour into pie shell and bake for 35 to 40 minutes, or until set. Serve warm or cold, with whipped cream and fruit as a garnish if desired. I'm definitely going to try it. . .and then I'm gonna try it again with some melted chocolate stirred in, maybe in a marbled pattern.
