I like to make the batter with fermented milk that can be bught in the supermarkets here due to large arabic community here in France. It makes pancakes that are as light as a feather. I have slacked off in writing my weekly menus, which help me so much to come up with good meals for supper, and with my grocery shopping. Today is another one of those days I would have been racking my brain come four o'clock, or maybe pulling a bag of frozen french fries from the deep freeze because nothing has inspired me to do more. Pancakes for supper, it is! I make a very simple whole-wheat pancake, a large recipe so that my kids can toast the pancakes for their breakfast for the following few days. 5 cups whole wheat flour 5 tsp baking powder 1 tsp salt 5 eggs 5 cups milk 1 or 2 tsp vanilla I often throw in a cup of frozen raspberries or saskatoons, picked last summer, and serve with pure maple syrup, yogurt, and caramel sauce (actually sucre à creme, a francophone deliciosity, that I make myself). LOL I have tried all different recipes, different brands, even pre-made-just-add-water-and-shake, and they all are awful! I LOVE IHOP's hearvest nut and grain pancakes and could eat those every day. If I am feeling like having somethign a little fancier I will add peach yogurt or lemon. Very tasty.
