Try mixed lettuces with chopped artichoke, carrots and cauliflower with some zesty oil and vinegar dressing. Like Good Seasonings Italian. There is so much more to it than having some green beans potatoes and carrot sticks on a plate. Many recipes can be made veggie just by leaving out the meat. I make a killer baked spaghetti. Tomatoes are coming in .. how about a good old "mater" sandwich with white bread and mayo and a dash of salt and pepper! I'll usually make a salad and stuff it in a pita for lunch with a slice of cheese. Soup is always good. Guest guest Posted February 27, 2009 Report Share Posted February 27, 2009 Hi, I'm JoAryn and I usually cook for one. Occasionally, I also make dinner for my mother or the rest of my family. My aunt in particular is a strict vegetarian and my sister eats as little meat as possible. I'm in Ohio (in the US) and off and on through my life I've tried to go vegetarian (and once, vegan). I'm not vegetarian currently but like my sister, I try to avoid meat. I keep trying to get my mother to eat more healthfully but there has to be a lot of flavor for her to enjoy it (and not spicy flavor). I've managed to substitute cauliflower for chicken in a few dishes but I'd really like to find some nice flavorful dishes (probably Indian/Middle Eastern/Mediterranean) that have good green veggies because she's worse than a 6 year old when it comes to eating her vegetables!
