I needed a (1, ONE) chipotle pepper for a new chili recipe that I am going to try out - attributed to Heather Mills (from the weekly Meatout Mondays - http://www.meatoutmondays.org/index.php). The grocery store sells them in packages of about 20. Any suggestions for freezing? Dehydrating? Guest guest Posted March 3, 2009 Report Share Posted March 3, 2009 What I do with regular chilies, Maida, is simply to freeze them, flat on a plate so they don't stick together, then bag them. I don't see why this wouldn't work for chipotles too. I do keep chipotles in the fridge in a jar for quite a while, but my next lot I'm going to split half in the fridge and half in the freezer and see which I prefer for storage. Of course, chilies frozen lose their crispness (and then some) but aftet they're cooked that doesn't much matter anyway.
