Guest guest Posted March 7, 2009 Report Share Posted March 7, 2009 I am exploring " Classic Vegetarian Cookfor from the Middle East and North Africa " by Habeeb Salloum. A number of the recipes call for stewed tomatoes and I can't find any references in the book as to what the author is calling for. As for stewed tomatoes, I am only familiar with the canned stuff from American grocery stores, filled with sugar and all kinds of other ingredients. Is anybody here familiar with Middle Eastern cooking, and if so, what kind of stewed tomatoes might be called for? The recipes in the book appear to be authentic, so I doubt a Syrian/Lebanese/Palestinian etc. would go to the market for Del Monte Stewed tomatoes! Thanks.
