Potato-Cheese Tacos With Three Chiles

These are the absolute bomb, and they're super-easy. Pagans,

they'd be great to make for a crowd at Litha as as long as

you're not doing all the party and ritual prep by yourself.

But please remember. . .a sizable minority of people HATE

cilantro because they have a physical trait, apparently

inherited, that causes it to taste like soap to them. There

really are other herbs to use in something like this, honest.:)

Title: Potato-Cheese Tacos w/Three Chiles

 

3 lg. baking potatoes

1/3 pound SHARP cheddar, finely grated

1 lg. or 2 sm. Anaheim or Big Jim chiles,

finely chopped

3 red jalapeños, finely chopped

2 to 10 serranos, cayennes, Super Chiles or

Thai Dragons, minced

1 Cubanelle or other flavorful frying pepper,

minced

1 egg, lightly beaten

3 to 5 green onions, white and light green

parts, finely chopped

3 Tbsp fresh parsley, basil or (if you must)

cilantro, minced

10 to 12 6-inch corn tortillas

1/2 to 2/3 cup canola or similar oil for frying

(not olive)

 

Preheat oven to 400° F. Bake potatoes in center of

oven 45 to 50 minutes, or until tender when pierced

with a fork. Remove from oven and cool to room

temperature. DO NOT bake in foil!

 

Slice in half and scrape the flesh into a large bowl;

gently crumble with a fork. (Do not mash the potatoes

or they will be gummy.)

 

To the potatoes add the cheese, chiles, egg, onions

and herbs; mix gently with a fork until thoroughly combined. Cover

tightly with plastic wrap and refrigerate for 2 to 24 hours.

 

To prepare tacos: Lay tortillas on a flat surface. Using

about 2 rounded Tablespoons per tortilla, spoon the

mixture onto one half of each tortilla. Fold over the

second half and press gently to secure.

 

In a very large, nonstick sauté pan, heat about 1/4 " of

oil over moderate heat until hot. Add as many tacos as

will comfortably fit in the pan without crowding. Cook

each side about 2 minutes, or until they're light golden

brown and the filling is heated through. Remove with a

slotted spatula and drain on paper towels.

 

Cook the remaining tacos in this fashion, adding more oil

as needed and letting oil get hot each time. Serve immediately,

garnished with herb sprigs. Serve canned or fresh tomatoes

alongside, or pickled green tomatoes. (Or, heck, both. :) )

Oh dear Rain, whenever I see your recipes I'm always sad about the very few

varieties of chiles I have available to me :( These tacos look wonderful! And

how nice to use potatoes - more and more ways for potato-lovers to indulge

themselves!

 

I've filed your welcome recipe away in the file that is for Sandwiches, Wraps

and so on :) Fantastic!

unmanageable. " :): ) But actually, what's gotten me back into suing

potatoes to fill other stuff with has been re-connecting with Indian

food recently. Hmmm. . .let me dig out some of those

recipes and see if I can whip 'em into postable shape.

Ya don't have to be Irish to love potatoes (although I agree it does help - my

dh's father's family were from County Clare) - and yes there are some great

Indian recipes. I usually make 'Potatoes and . . . '. Also have a couple of

Moroccan-style potato recipes in there. Anyway, potatoes have a folder of their

own in our Files, in honour of, well, potato lovers? (Can't quite get to

'potato-heads'!) Let's try to fill it up!!!
