Hi Bruce,

 

Sorry, no, I don't have a recipe of my own - ie one I have developed myself -

but I do have one I can highly recommend since I have made it several times now.

It uses pure gluten powder rather than seitan mix or a ready-made seitan, so is

from scratch in that sense. (I have never made my own gluten from the ordinary

flour itself.) It is baked in the oven.

If you scroll down past the salad recipes, you will come to the main courses and

the one I use is the seitan turkey recipe - although I don't stuff it. I make it

into loaves, as she describes ('she' being Bryanna Clark Grogan). They freeze

I made this earlier this week and we just had some for lunch with mushroom

gravy, lightly steamed chard plus some (leftover) bean cassoulet. Excellent.

 

I should add that there is a recipe in our Files, under Faux Foods (in the

two-starred section of the Files, following the Main and Side Dishes folders),

for 'Ground Seitan (a ground burger substitute)' and another for 'Seitan (Making

Reuben)' which starts out with the flour itself. I haven't tried either recipe,

although I have made something like the Ground Seitan recipe in the past. Now I

just make it according to my slight changes to Bryanna's recipe.
