Guest guest Posted May 23, 2009 Report Share Posted May 23, 2009 Hi Bruce, Sorry, no, I don't have a recipe of my own - ie one I have developed myself - but I do have one I can highly recommend since I have made it several times now. It uses pure gluten powder rather than seitan mix or a ready-made seitan, so is from scratch in that sense. (I have never made my own gluten from the ordinary flour itself.) It is baked in the oven. I make it into loaves, as she describes ('she' being Bryanna Clark Grogan). They freeze well. Excellent. I should add that there is a recipe in our Files, under Faux Foods (in the two-starred section of the Files, following the Main and Side Dishes folders), for 'Ground Seitan (a ground burger substitute)' and another for 'Seitan (Making Reuben)' which starts out with the flour itself. I haven't tried either recipe, although I have made something like the Ground Seitan recipe in the past. Now I just make it according to my slight changes to Bryanna's recipe. Hope this helps.
