Result? Delish. I think I need to work a bit on the shape of the fillets - yes, I opted to make the fillets - and perhaps I should be more careful over timing to be sure the texture is as intended. However, it was very very good. We had it the first time lightly floured and then served with a little sliced chinese mushrooms, a few strips of home-roasted hottish red peppers and a sort of coconut-chili-peanut sauce lightly spooned over the top. Today we had the other half of it with just a little chopped seaweed, ginger and mushrooms stirred into the fish seitan that I had dipped lightly in panko crumbs and 'sauteed' in a pan sprayed with that pan spray stuff. Worked just fine. Next time I wanna try the scallops and shrimp versions of the seitan with maybe a tad more kombu in the cooking liquid for a 'fishier' flavour. I'm also keen to try a smoked fish version, perhaps smoked 'salmon' or one of the others - different colouring from different seaweeds and spices, obviously, but much the same kind of idea.
