Braised Tempeh and Cabbage (Vegan) - from Robert

Hello everyone - This recipe was included in response to a question in the

recent Questionnaire and Survey by Robert - I am copying it here in case anyone

missed it.

> > Braised Tempeh And Cabbage (Vegan)

> 1t olive oil

> 4 medium onions,chopped

> 10 garlic cloves,chopped

> 21/2 lbs cabbage,cut into 1 inch pieces

> 1T caraway seeds

> 1/2 T sea salt

> 16 oz Tempeh

> 2c sourkraut(or pickle) juice

> Heat pot over medium-high heat and add oil.Add onion and saute 6 minutes.Add

garlic and cabbage and cook 8 minutes.Add caraway seeds and sea salt and cook 3+

minutes.

> While the cabbage is cooking,steam the tempeh 20 minutes.Cut tempeh into 1/4

inch strips.Rub oil on tempeh strips.Heat a large skillet over medium to

medium-high heat.Add tempeh,seal/brown one side,then flip over(you may need to

add 1t of oil),seal/brown other side.When browned,add sourkraut juice and cook

over medium-high heat until all of the liquid is is absorbed.

> At this point,lower the heat a little and cook until the tempeh has dried

out,and if possible,has become a little crisp again-be careful not to burn

tempeh.

> Serve on the braised cabbage.

> Serves 6

Pat,

Thanks for posting these-I guess they might have got lost there in the survey

:).

Here is one I like.

Adai serves 4-6

1c Brown Lentil sprouts

1c Mung bean sprouts

1inch Ginger,peeled,chopped

3 Serrano chilies OR 3 dried Red chilies

1/2c Scallions,chopped

1/2c Spinach

2T Cilantro,finely minced

1t Salt,or more to taste

Grind sprouts with ginger and chilies into a coarse,thick paste.Mix in

salt,scallions,greens and cilantro.

Spread a ladleful of batter,thickly on a medium hot griddle.Add 1t of oil around

the pancake.Cook for about 1 minute on each side.

The adai should be a rich reddish brown.

Optional:

To the grinded mixture add-cumin seeds(even better if you toast 'em first) & 1/2c

of water,finely chopped onions and cilantro.Perpare as directed above.

Boy oh boy,I love these!
