She is vegetarian, diabetic, high cholesterol, and allergic to wheat, peanuts, and corn...any ideas on some creative foods? I know there is a lot I can do - I have gotten creative with a few things, but anyone got any ideas? The wheat allergy is not too bad so some wheat is okay, but peanuts are corn are really bad. Spinach and Rice Salad ½ package fresh spinach 1 cup rice juice of 1 lemon 1 small zucchini ½ cup mushrooms ½ cup carrots ½ cup broccoli ¼ cup sundried tomatoes ½ onion, finely diced 1 clove garlic, minced 1/8 cup chopped walnuts 2 tablespoons olive oil 1/8 cup fresh oregano ¼ teaspoon salt and pepper ¼ cup vegetable stock splash of white wine (optional) Slice all the vegetables. Sauté in the oil – starting with the carrots and onion. Cook for a few minutes. Add the rest of the vegetables and ingredients (except the herbs and lemon juice). Cook until the carrots are al dente. Mix with the cooked rice. Add lemon juice, herbs, and a little more olive oil (if you like). Serve warm or cold.
