I tend to fix it this way and it's a big hit: I cut the kale into bite size pieces, removing the stem all the way through the leaf. I wilt it in a frying pan with water. The leaves will turn a dark green. I like the leaves to still have crunch, so as soon as it is completely dark green, I take it off the fire and pour the water out. I add a bit of Tamari sauce, or soy sauce if I'm out of Tamari. Just enough to VERY lightly coat the leaves. I add a small handful of white sesame seeds and stir. Guest guest Posted October 29, 2009 Report Share Posted October 29, 2009 Hi Carol - I'm a newbee at this, so I hope this goes through right and gets to you in time - if not for today, maybe for a later time. We love braised kale. It is simple and nutritious. First you will want to prepare your kale. It should be washed well. We prefer to remove the stem portion clear down the leaves, leaving only the tenderness of the leaves. Chop them into bite sized portions as you would if chopping romaine. Set aside in a bowl. They should be cooked at a medium high temperature, so the oil you use should be one that is compatible with higher temps - I suggest safflower. You will need a large skillet with a lid. Saute about half a regular sized sweet onion in a bit of the oil, then add about a tablespoon (more or less to taste) of minced or riced garlic, and a bit of salt and pepper to taste. It will cook up quickly at this temp so stir a few times and monitor closely. Add all the kale at once, and cover to braise. I have electric burners, so I reduce my heat at this point to medium low so it will remain high for a time, but lower gradually. Stir once or twice to toss. In 4 - 5 minutes it will be nicely wilted and ready to serve. I hope you enjoy it.
