That would serve 5 'normal' (i.e. omnivore) people but probably only 2 vegetarians or vegans. (Half a cup serving is precious little of any salad for people who live on vegetables.) Coconut milk - which I see as a slight problem when cutting the recipe in half - freezes well for another day so you'd not be wasting any. I won't put the recipe in the Files, Patricia, since we ask that only Tried-and-True recipes be posted here (and you say you haven't yourself tried this one). But if you should try it, please let us know and re-post the recipe, giving the ingredients and amounts thereof exactly as _you_ made it. Same goes for any other member who might like to try this one Hey, I might try it myself. Light coconut milk should work, shouldn't it? The high fat content in regular coconut milk scares me off. Lots of easy saurkraut recipes online or I recommend the book " Wild Fermentation " . Easy and alive with lots of good vitamins and enzymes. Enjoy....
