I started off in sympathy with the 'balky calf' being used as a test subject.

Then a couple bits towards the end of the article especially caught my eye:

 

" The large-scale study . . . will include close to 100,000 cattle, with the

animals going next summer at Cargill's Fort Morgan slaughterhouse. "

 

And:

 

" E. coli contamination generally starts when bacteria in feces on a cow's hide

are transferred to the carcass. Cargill has added many steps to keep carcasses

clean, including steam pasteurization and hot water washes. "

 

Hmmmm. I don't even think that needs comment.

 

Glad you're a veggie? Pleased that we don't want animals penned all their lives,

sick and frightened, just for a few minutes on our plates? Me too.
