Guest guest Posted December 30, 2009 Report Share Posted December 30, 2009 Irish Bean Stew Submitted by: Marilyn 1 onion, chopped 1/3 c. water 3/4 t. caraway seeds (I put a whole t.) 2 c. frozen chopped hash browns 2 c. frozen mixed vegetables (I used baby carrots and baby limas) 1-3/4 c. vegetable broth (I used one whole can--I think around 14-15 oz.) 4 c. chopped cabbage (this was 1/2 head) 2 15-oz. cans small white beans ground black pepper to taste Place onion and water in large pot. Cook, stirring frequently for 3 minutes.. Add caraway seeds and cook for another minute. Add potatoes, veggies, and broth. Mix well, cover, and cook for 5 minutes. Stir in cabbage and cook 5 minutes. I've corresponded with Harvey via his website, and find him to be quite genuine. A Happy, Healthy, and Meatless new Year to all of us!
