Irish Bean Stew

Irish Bean Stew

1 onion, chopped

1/3 c. water

3/4 t. caraway seeds (I put a whole t.)

2 c. frozen chopped hash browns

2 c. frozen mixed vegetables (I used baby carrots and baby limas)

1-3/4 c. vegetable broth (I used one whole can--I think around 14-15 oz.)

4 c. chopped cabbage (this was 1/2 head)

2 15-oz. cans small white beans

ground black pepper to taste

 

Place onion and water in large pot. Cook, stirring frequently for 3 minutes..

Add caraway seeds and cook for another minute. Add potatoes, veggies, and broth.

Mix well, cover, and cook for 5 minutes. Stir in cabbage and cook 5 minutes. Add

beans and cook for 10 minutes, stirring occasionally. Season with pepper and

serve.

Thanks, Marilyn - another MacDougaller :) They have some good recipes, don't

they, and some really easy ways to prepare good things quickly. I've filed it

under Beans and Lentils etc.

This sounds wonderful, as does the Nigella Lawson recipe--

 

I'm new to the Vegetarian lifestyle, and currently in transition; Right now, I'm

implementing the principles of the tried and true " Fit for Life " plan by Harvey

and Marilyn Diamond, as recommended by my internist. I've corresponded with

Harvey via his website, and find him to be quite genuine.
