hi Pat....my husband had hernia surgery today, so he's not having dinner...he's asleep in the recliner with a pillow on his tummy....I had a slice of whole grain bread and some raw cucumbers...not much, I know , but I had a pretty big veggie wrap while at the hospital long with some raisins and seeds. I was impressed the hospital had such a healthy wrap available in the cafeteria.

What's On The Menu?

Hi everyone!What's on the menu for today??? I'm looking at some asparagus and thinking I will make a Hong Kong dish we rather like that is spicy and delicious over brown rice. How about the rest of you? What's for dinner/supper?Best,Pat ;=)

Ouch, Nancy :=( Sympathy to your husband - I can quite

b elieve he doesn't feel like eating! Hope he's doing

better soon! As for you and your healthy veggies

today, that sounds great! And yes, whatever happened

to hospitals that they have suddenly started serving

healthy food? Incredible!!! :=)

Hi pat I really enjoyed my dinner tonight, went to my new raised garden in back yard and picked spinach, romain lettuce, radishes, green onions brought to kitchen cleaned and put in salad spinner, it was so crisp and fresh. But I did not stop there,added green olives, cherry tomatoes, bell pepper, sliced boiled egg, blue cheese crumbles and a great vadailia onion salad dressing. Funny ...skure seems like an awful lot now. oh, I forgot about the red wine, which really set it off. Ralph

Sounds sensible and tasty and not too long a process

;=) Tell me, what do you marinate your tofu in? I

mean, what spices/liquids/flavourings? I usually use,

depending on the recipe, Braggs AllPurpose Seasoning

(or whatever they call that unfermented soy thing) or

tamari with perhaps a little grated ginger and/or

garlic. Oh, and sometimes a dash of turmeric powder

for colour. Any good ideas?

Actually, I buy it pre-marinated. Thai peanut flavor

is quite good, as is the ginger soy. I add hot sauce

and lime juice to spice it up a bit for either flavor.

Well, duh Pat *lol* Of course you can and therefore

why not!!!! Silly of me. I don't - mainly because

there are only two of us and we use about 1/3 of a

pack of tofu at a time - so I buy plain, freeze some,

use some, and marinate (if needed) as the occasion

arises. Of course, I could buy the premarinated tofu

and divide it up and label it as to flavour, couldn't

I. That would save time and effort. *lol* sometimes I

really really wonder what I am using for brains. It's

just that we could only get the plain soy (or the

dessert variety, of course) where we shopped in

Ontario. I shall look for the other kind here!!!

The packages that I get are fairly small, not tiny,

but about right for stir fry for 2 or for 1 with

leftovers. <G> Although that can vary, depending on

what tofu to veggie ratio you like.

Don't feel bad. I've been a vegetarian since before I

discovered the world online, have been online and on

lists since the late 90's and only just this year

thought to join any vegetarian lists. Doh!

Strangely enough, the only place that seems to carry

it locally is Wal-Mart. I look every time I'm in a

regular grocery store and have yet to find any elsewhere.

Yes, I was a bit late with that reply. Maybe I should read all the

messages before I reply in future!

Seems it's easier to get over here (UK) than in the States - it's

everywhere. Well, supermarkets & health food shops anyway.

Whoops, sorry Viv! No, that was not intended as a

rebuke at all - just kicking myself for not thinking

of it ;=) 'I got that message' meant that I really

really should go looking for the premarinated stuff,

not that you were repeating a message already

received! So sorry :=(

 

And no, don't read all messages before you reply -

that really is miserable to do because then one feels

one can have nothing to say. Besides, for me, it's

better to have several people tell me the same thing -

it kinda reinforces what the advice is - rather than

just getting it from one person, no matter how much I

trust them ;=)

 

Soooo my 'yeah . . .' message was meant to be tongue

in cheek but I shall take more care in future not to

OK yesterday we had rapini on pureed fava beans (recipe from Madhur Jaffrey's

_World Vegetarian_ cookbook) which were delicious. Today I dunno what we're

having - we have some lovely fresh dinosaur kale, which is a start. Hmmmmm.

 

What do you guys have on the menu for today? (Or what did you have yesterday?)

We are having some wonderful (but recipe-less!!!) home made and very thick

vegetable and barley soup.  It turns out differently every time because it is

basically a 'clear out the fridge' sort of soup.  This time it has broccoli

stalks and a couple of escaped broccoli florets, potatoes, onions, carrots,

onions, leek greens, tomato puree, chilli flakes, vegetable bouillon powder,

saved vegetable cooking water and barley.  I also have some delicious whole

grain rolls to go with the soup.  A favourite meal and a real winter warmer.

I'm making that sort of soup later today too, Marie :) Gotta do something about

some carrots I've got, celery, sweet potatoes, onions, potatoes, etc. etc. etc.

You get the picture (cuz you've just painted a similar one). Not sure how I'll

season it, though, or whether it will turn out to be a soup or a stew. I've got

cauliflower too. Thinking . . . . And some more fava beans . . . .

I think for today I am going to combine garbanzo beans and cauliflower in the

silver bullet and make a mock chicken/tuna salad.   Maybe combine it with

potato salad, tomato and avocado.

Hi Pat,

 

I have just paid a visit to your blog.  It all looks and sounds soooooooo

good.  The photo of the Cajun-spiced portabellas really set my gastric juices

running!!!  I bet they tasted as good as they look.

 

OK, what are we eating?  You caught me at a good time with that question as I

have just finished making a rough menu for the next couple of weeks..  I try to

have soup at least once a week but, other than this proviso, the menu is

flexible at this stage.  I shop once a week and the actual order these dishes

will appear on the table more or less depends on what vegetables look good when

I am shopping at the weekend.

 

Sadly I can't share the recipes as most of these dishes are things I'll play by

ear as I am cooking.  If I remember I'll jot down a few notes as I'm cooking.

 

Stir-fried mushrooms and broccoli with noodles and cashews

French onion soup

Zucchini, mint and feta fritters

Nachos

Ratatouille wraps

Cheese and rice patties

Spinach and potato curry

Carrot and coriander soup

Baked polenta with mushrooms and bell peppers

Butternut squash risotto

Vegetable burgers

Spaghetti carbonara

Broccoli and cauliflower strudel

Lentil 'shepherds' pie
