Guest guest Posted February 4, 2010 Report Share Posted February 4, 2010 Sorry for the last post - was cutting and pasting and editing and got my dishes mixed up when it came to naming one here But it'd be nice to know what you guys are eating this week - or planning to eat. My latest attempts are on my blog, including a Lima Bean and Broccoli dish and a Chilied Asparagus with Quinoa and Baked Tofu dish. There are pics too (although I'm no professional!) to help get the idea. We're eating a lot of 'beans 'n' greens' lately, interspersed with some other experiments to be revealed soon So what's on your menu? I would love to see what you have created. I'm doing a lot of Green veggies this week. I'm experimenting. I did steamed greenbeans with mushrooms and onions. I also cooked some spicy okray and tomatoes over rice using vegetable stock. Since I'm still transitioning.... For my family I fixed [non-vegetarian menu item deleted] with cabbage and corn. [non-vegetarian chat deleted]. I also would like to see the vegan jambalaya recipe My husband makes it with [deleted]. Thanks. Newbie in transition. And there's a whole world of fruits and vegetables out there. Funny you should mention okra, cuz I just bought some from the market yesterday and before I saw your post - the first time in ages I've seen them for sale there. We do ours also with tomatoes but in Indian spices. I'll see if I have a recipe I can post I think you _will_ find several jambalaya recipes in the Rice folder in our Files area. I have probably put one up there myself but there are others probably even better. I have more than one blog, but the one you're probably looking for is called BeanVegan: http://beanvegan.blogspot.com I've been neglecting it for some months, but I'm getting back in the swing of it now and shall be posting more later today. What'd you do with those green beans? Just add the mushrooms and onion to them while cooking? That's what I sometimes do. Or did you make a sauce for them?
