I actually just bite into it and eat it by itself most of the time

(as sort of a crudite...like raw pepper slices). I can get it really

fresh at my farmer's market.

 

Or, I've cut it into pieces and put in in a cold salad. If you don't

eat it right away once it's cut, some of the goo will be released.

Doesn't bother me, but some folks don't like it.

 

It's also good slices in chunks, dredged in fine cornmeal or flour,

and quickly sauteed in fat. Yum! Cinzia

Cinzia,

 

Eating raw Okra would be like eating sardines for me, not something I

can do. I like my food cooked, call me crazy, ok?

LOL, Bob!

 

I get incredibly fresh okra at my farmer's market & it's just

gorgeous. I wouldn't eat the stuff at the grocery store or Whole

Foods raw.

 

I like a lot of veggies raw but I cook them, too. Oh, and I kind of

like sardines. <smile> Cinzia

I like to trim the ends and oven roast

with a garlic/herb blend shook over top.

Okra

 

 

I'm getting some okra in my CSA box Monday. This is one thing I haven't done

much with yet. Does anyone have any favorite recipes or preparations for it

they can share?

I LOVE okra!  (Okay, I much prefer it fried, but that's a no-no here...LOL!) 

 

Back to the slimming at hand...I would think a nice, healthy veggie gumbo would

be awesome.  I don't have a recipe and I'm running out to lunch right now, but

if you can't find one or nobody else posts one, I'll look for one later...'cuz

now I think I want some, too!

This one sounds great and easy.  I think I'd throw in some soy sausage, too. 

File powder can be found in your local health food store if they're like mine

and have a great selection of herbs and spices, otherwise it'd still be awfully

good without it.

Hi

It is the dreaded slime that you are trying to avoid, that is why you have to be

careful in cleaning the okra. A covered pan creates steam which brings out the

slime.

I know that you can buy frozen okra, which of course, doesn't mean that you can

do it at home.

Perhaps someone else will weigh in on this one.

A couple of questions:

 

1) Why wipe with a cloth?

 

2) Why not put a lid on the pan.

 

When I cook okra, I don't wipe, and I cover.  Am I doing it wrong?  It sure

tastes good!

Hi Chris and Vegetarianspice friends,

Okra is my family's favorite vegetable. And I gave you their favorite recipe.

Because of the spiceness of this dish, it is very satisfying with just the rice.

It kind of reminds me of the explanation of poorer nations using more spices, it

is to extend the quantity of food.

 

Often we just have it plain. By this I mean we slice it into coins and fry it

with a bit of corn meal. Takes about three minutes. The main thing is that when

you clean the Okra is to wipe each one with a cloth, and never put a lid on top

of the pan.

 

I have tried growing it as well. What it really needs is a hot August.

My favorite way to cook okra is to cut it into round slices

about 1/4 inch thick. Mix flour, baking powder, and a

little water together to make a batter about the

consistency of pancake batter. Mix in the okra.

 

Heat a skillet and put some oil. Pour 1/4 to 1/3 cup

patties of the okra and batter and fry until golden brown.

Flip and fry the other side as well.

 

No sliminess at all.

 

Some people use corn meal in addition to or instead of flour

for this. My father was allergic to corn and so I grew up

on the patties made without corn.
