Guest guest Posted August 5, 2008 Report Share Posted August 5, 2008 I actually just bite into it and eat it by itself most of the time (as sort of a crudite...like raw pepper slices). I can get it really fresh at my farmer's market. Or, I've cut it into pieces and put in in a cold salad. If you don't eat it right away once it's cut, some of the goo will be released. Doesn't bother me, but some folks don't like it. It's also good slices in chunks, dredged in fine cornmeal or flour, and quickly sauteed in fat. Yum! I wouldn't eat the stuff at the grocery store or Whole Foods raw. I like a lot of veggies raw but I cook them, too. A covered pan creates steam which brings out the slime. I know that you can buy frozen okra, which of course, doesn't mean that you can do it at home. Perhaps someone else will weigh in on this one. And I gave you their favorite recipe. Because of the spiceness of this dish, it is very satisfying with just the rice. It kind of reminds me of the explanation of poorer nations using more spices, it is to extend the quantity of food. Often we just have it plain. By this I mean we slice it into coins and fry it with a bit of corn meal. Takes about three minutes. The main thing is that when you clean the Okra is to wipe each one with a cloth, and never put a lid on top of the pan. I have tried growing it as well. My favorite way to cook okra is to cut it into round slices about 1/4 inch thick. Mix flour, baking powder, and a little water together to make a batter about the consistency of pancake batter. Mix in the okra. Heat a skillet and put some oil. Pour 1/4 to 1/3 cup patties of the okra and batter and fry until golden brown. Flip and fry the other side as well. No sliminess at all. Some people use corn meal in addition to or instead of flour for this. My father was allergic to corn and so I grew up on the patties made without corn.
