Megan, My kids love the recipes out of an older cook book called " Diet for a

New World - May all be fed " . The Orange-Poppy Seed Pancakes are a snap to

make and delicious. I use:

1 2/3 cup soymilk

1 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup oats

1/2 cup sunflower seeds

1/4 cup poppy seeds

1 tsp grated orange zest (often I leave this out)

Stir these ingredients up and cook them on a hot griddle! Serve w/fruit or

maple syrup.

Good luck and I hope you can find the book at a library. The author is John

Robbins.

David, my 20 month old, is in a breakfast rut. LOL :) I make him a slice of

french toast with whole wheat bread every single day. HE LOVES IT. I dip it in

an egg and I add a little cinnamon after cooking. I don't like to do too much

soy, but he does drink 2 cups of silk a day. With the daily french toast, the

silk, and all the veggies and grains he eats throughout the day, I know he's

getting plenty of protein. That puts my mind at ease.

 

Other ideas for breakfast could be whole wheat bread with a nut butter. Bagels

are great too. You can also make homemade muffins at night for breakfast the

following day.

I eat bagels, grits, oatmeal, pancakes, gimmelean soy sausage, & smart bacon.

Occasionally I eat cold cereal but I'm more of a hotcereal kind of person.

We have smoothies a couple of times a week. My kids' favorite is : frozen

strawberries, a couple of bananas, and soy or rice milk (vanilla or chocolate).

 

Oatmeal is a favorite here, too. We usually add some ground walnuts and maple

syrup.

 

My kids love to have warm soup for breakfast (usually leftover from the night

before).

 

Many mornings we just have fresh fruit and nuts and a cup of soymilk.

 

Oh -- and muffins are always a hit, too!

Megan

 

We do alot of oatmeal or other hot cereals, now that

it is cold, with an orange (they are in season now) or

juice.

 

Smoothies are always great too. Just add your favorite

fruit, fresh or frozen, juice, soy milk (some add

yogurt to thicken) wheat germ, flax seed oil, what

ever you like really. Blend it together and it can be

different every day. We vary our smoothies alot. It is

also a good healthy (and fun) snack instead of ice

cream or other treats.

 

Toast with peanut butter or any other nut butter is a

favorite too.

 

If you have time, you could make muffins the night

before (banana nut, apple raisin, orange cranberry,

etc).

 

There are always pancakes or waffles with maple syrup

too. The morning star farms veggie breakfast links are

a good companion with either of these.

I am a pancakes/waffle person myself (home made on the rare occassion

that I have the time but usually store bought). Though I am not

vegan, my husband is, so I know that there are some good vegan

waffles out there or there are tons of recipes for waffles or

pancakes which you could make a big batch when you have the time and

freeze the leftovers for quick breakfasts on other days. Other ideas

are hot cereal/oatmeal, toast, soysage, veggie bacon, grilled

potatoes, etc......

oh yeah.....I forgot tofu scramble. I forget the brand but its a mix

that makes scrambled " eggs " out of tofu.

Fantastic Foods' Tofu Scrambler.

My son's favorite.

But if I'm out of Scrambler mix, I'll crumble tofu in the pan with a touch

of oil and generous nutritional yeast.

Both are great on bread.

Yum, sounds like you’ve got

breakfast going great! If you are looking for an alternative protein powder, I

recommend the George’s Jr—it is whey based, mixes well and tastes

yummy :)

hello there,

 

 

i'm solid with my breakfast, i eat a protein shake every

morning...it consists of soy protein powder, (i need to try other

kinds as i suspect that i'll be eating tofu for other meals and i know that

eating too much soy on a daily basis isn't good), two scoops of

oats, about 1 1/2 cups of milk and a serving of the orange flavored fish oil

I do not eat anything until about 11am. If I am hungry at that time I will eat

fruit or fruit juice that has been freshly juiced. Usually a juicy fruit such as

an orange or watermellon. Or Cantelope. Or I make a smoothie of one of the

mentioned fruits added with some berries. Cantelope I eat or drink it's jiuce

all by itself.

Hi, Tiffany! I generally have a large glass of fresh squeezed OJ to

start. I have to chew it because I use a citrus juicer that leaves all

the pulp and other stuff in it. Then I have some fruit--whatever I

have around. Winter is a little more spare than summer. I've been able

to get some good mangos and pears from the organic co-op I belong to.

Sometimes, it's strawberries. I have kiwi, too, but they aren't as

sweet as usual. Then I blend up a green smoothie--at least a quart.

It's three or four bananas, depending on the size, lots of greens (the

outer leaves of romaine or some baby spinach), and enough water to

blend. You can use any of the sweet leafy greens. Roger makes a

smoothie with bananas, cucumber, and celery that's considered green,

too. Since I work, I get up early in the morning. I don't eat for

about two hours, usually around 7:30 am. That gives me time to drink

my water and exercise. The time of day is highly individual. Some

people don't " wake up " enough to eat that early.

Hi Tiffany!

I too read Fit for Life ( albeit YEARS ago) and have eaten only fruit or

smoothies for breakfast since. Eat ALL you want.. example- My kids and I ( 12

and 5) will eat an entire big watermelon for breakfast and a couple bananas each

or 2-3 cantaloupes and a banana each or in peach season ( oh man I can't wait) a

dozen peaches! LOL

We actually eat '2' breakfasts- one early and one around 10 or so. It is really

important for me to start this way. The way you start your day really sets the

tone for the rest of it!

Be brave and experiment with new fruits too. I recently discovered 'honey

mangoes' - OH MY!

I really do enjoy starting my day witht he fruit, even if I do hop off the

wagon, at least I start witht he fruit everyo morning. Makes me fell good

as I transition slowly to more raw foods.

When you wake up in the morning your body has not eaten or drank anything for

approx 6-8 hours.. it has gone through a type of fast... when we eat we are

breaking the fast... hence the name breakfast... So as with any fast you should

go into eating anything gently. Juices are the best route. our body also needs

the natural sugars this will be the reason for the fruits. to replace any

sugars.

 

The best time of day to incorporate the veggies is around noon.. now if you

get up later.. just figure to give your body 4 or 5 hours from the time you get

up for something harder to digest as a veggie. this is a good time for like a

green smoothie.

 

This all being said.. I have read and done myself green smoothies in the

am..but usually do not get those going til around 10 if I have been up since 7..

or I will get a green smoothie in for evening snack.. have a huge salad for

lunch... fruits for snacks.. it varies through the day. It will also vary as to

what you feel is right for you.. Some people will eat only fruit all day... with

vary little greens...

 

but it is a good rule of thumb to figure fruit in the am be it freshly

squeezed (not bottled processed) or just pure water in the am...then veggies and

fruits properly combined there after...

No matter what time I wake the very first thing in my stomach is

wheatgrass juice, best absorbed on an empty stomach, its for my knee

inflamation. I always have a friut smoothie, nothing but raw fruit

and frozen geothermal Trinity brand icecubes, can't start my day

without. I feel fruit in the am is best, then veggies, then grains,

I tend to keep my heavier carbs later in the day, like a nice raw

muesli for dinner, yum!

I had some Black and Blue Berry Naked Juice, a banana and I'm going to find

something else to munch on. Maybe I'll slice up an orange.

I usually have a GenSoy protein shake with 3/4 cup of blueberries

(blended in the shake) and a piece of whole wheat toast. I love the

shake, some days it is difficult not to have a couple more throughout

the day!

After reading the posts in the radiant veg group, I began having the smoothie, and a bowl of steamed veggies of some sort for breakfast. I was on a reducing diet, so I was staying away from flour. It helped too. I like the shake, it makes one meal of the day simple. I am also able to get creative and put whatever is in my fridge in the mix. You can sneak in a serving of green. I have put, spinach, sprouted quinoa, lettuce, mango, blueberries, banana, kefir, soymilk, and of course protein, etc. Not all the same time of course.

 

Sometimes I will have leftover dinner for breakfast. Being a veg does not have to make breakfast difficult. It can allow us to use our imagination. Have fun with it, explore foods you haven't tried before. ~Deanna

Right on. A Veggy breakfast, lunch, or dinner can all be about the same. I

alway's smile

when thinking about this, it's an upside of our eating choices. We need to make

sure we

get enough protein for our body.

Congrats on making a very constructive, life-affirming step in your life! ...

My breakfast: herbal tea (works in a travel mug), hot cereal (such as quinoa

flakes, buckwheat flakes, rice flakes, millet flakes and guaranteed gluten-free

oat flakes) with cut up banana and raisins (could be eaten from a covered bowl)

and a serving of some other fruit like an orange or 1/2 melon or a pear.

 

It's quick, simple, tastey, nutritious and sustaining.

Hi All-

 

I'm new to this list and new to the vegan/gluten free thing. I've been

lacto-ovo vegetarian for 15 years and am getting rid of dairy and

gluten due to suspected allergies/sensitivites. I'm excited to learn

from all of you.

 

After a week and a half of being df/gf, the biggest challenge I'm

having is breakfast! What do you all eat for that first meal of the

day? Bonus points if its portable, as I have quite a commute and often

eat on the train.

 

I'm a young busy professional, and have given up my last 2 sundays to

prepare food for the week. The menu planning has been key so far to

staying on track with the elimenation diet. Does it get easier? Or are

my Sundays gone forever?

Do you know how to calculate whether you are getting enough protein grams at

breakfast for your weight?
