Welcome Vince. Nice to have another vegan on our list. I have learned

so

much from the ones I have been fortunate to know. :)

Hi Catherine

Same as usual - how are you? It's good to hear from you again. Did you

manage to get to the Vegan Festival? We went early - it was good - more

room at Kensington Hall than Conway Hall.

HI Catherine

I forgot. It would be a good idea to meet up for a coffee - maybe at

Christmas Without Cruelty.

Redwoods fish fingers are quite a favourite here. We tried some of the

Redwoods salmon pate on toast - that was nice. We had some food from

veggies - I had a ratatouille pasty, and some coffee walnut cake.

Hi Heather, welcome in here with us. This sounds wonderful. I love hearts of

pal and I seldom see any recipes calling for them.

Thanks, Donna

So.. tonight I made Stuffed Grilled Portabella mushrooms.

4 Medium Portabellas

olive oil

1/2 c minced onion

1/4 c breadcrumbs (sourdough)

2 cups or more small cut Swiss Chard (or spinach)

2 minced garlic cloves

1/4 c diced grape tomatos

1/4 c chopped hearts of palm (pre marinated is easiest)

cheese to taste - mozarella/parmasan/asagio

In a skillet, combine 1tbl olive oil and onion. Add garlic when the onion

starts to turn translucent. Add Swiss Chard, tomato, breadcrumbs, and hearts of

palm. Saute all together until the swiss chard looks soft.

Meanwhile.. coat the mushroom caps with oil and then grill for about 5 min.

Put down a layer of cheese (shredded) on the mushrooms, then 1/4 of the

mixture from the skillet on each, then top with a bit more cheese. You can

stick it in the oven for a minute to melt the cheese.

ENJOY
