Hi everyone,

 

I found a recipe for Roggenscrotbrot in German.

I'm afraid I don't speak German but the recipe below is what the Google

translation site came up with.  It definitely isn't perfect English but it

could be helpful for anyone who wants to try the recipe.  There may even be

some German speakers in the group who could do a better translation from the

original recipe.  I assume thet the 'gem,' before the wrod wheat in the

ingredients list is an abbreviated for ground as it is similar to a Dutch word

with that meaning.

   Ingredients 350 g portions of fresh rye

550 g of fine gem. Wheat

1 cube of yeast

2 tablespoons honey

30 g of sesame (L)

30 grams of flaxseed (L)

20 grams of poppy seeds (L)

1 PKG natural sourdough (L)

3 teaspoons seasoning salt (L)

1 tsp cumin

1 teaspoon anise seed (L)

3 tablespoons milk

Preparation: grits and flour into a bowl. A push trough pour in, crumbled yeast

and honey. Pour 3 spoonfuls of 600ml lukewarm water over the yeast, stir and

allow to rise about 10 minutes.

Sesame, linseed and poppy mix. Half with yeast and spices give the dough.

Remaining water to pour until the dough hook, then knead with your hands.

Cover and let stand 40 minutes to go. Again, Strong and knead into a loaf shape.

Brush with milk and roll in the remaining seeds.

Place on a greased baking sheet and let go so long again until almost doubled

the volume of the dough.

In the oven at 200 ° for about 70 minutes baking.

I couldn't find a recipe either, although I've only tried googling. I don't know

if I've had this one, but I have had at least one kind of brot with cracked rye

- although not on this side of the Atlantic. Now you've made me keen to

experience it again! I guess I should ask around at some bakeries - and hope

it's vegan if and when I do find it :)
