Guest guest Posted February 15, 2010 Report Share Posted February 15, 2010 Whole Grains! Definitely whole grain breads. I like making them, nibbling on them, and occasionally, showing one off. Whole grain cookies are great too. All that good-for-you stuff, and it tastes like you're being naughty! Many recipes can be adapted rather easily... just substitute the healthy flour for at least fifty percent of the white. Personally, I find whole grains taste naturally sweeter, so I can often reduce the amount of sugar/sweetener in the recipe. One thing to remember...Once you go past 50%, with many grains it is necessary to adjust the proportion of the liquids--carefully. The joy in most cookie recipes is the crispness or crunchyness; too much moisture tends to increase the doughy-ness. Whole grains usually require a bit more moisture to be palatable. There are a few basic ways to look at the problem: One could crush the grain, (not necessarily flour, but at between the texture of cracked wheat and coarse cornmeal). At times, I've steamed very hard grains before adding them. This works pretty well in breads and cakes with only minor adjustments to the other ratios, if any. Some cookies take steamed grain ok, but again, monitor the moisture content carefully. Toasting some grains can make them more brittle/crunchy. Try different ones in different ways, because some can get just too hard by toasting. Grape-nuts cereal makes a good example (yes, grape-nuts can be counted as a hard grain for baking purposes). They can get real tasty in the oven, but they need to be crushed afterward, (or else I need better dentures!). Use whole grain the way you'd use nuts, raisins, or peppermint chips -- as a yummy addition to the recipe. If the grain is hard, then steam or toast the grain first. Unless you're quite used to using whole grains, these adjustments *will* require a bit of experimenting, so work with small batches at first and make sure you've got willing victims who will help gobble any uh-ohs. Anybody have any recipes for good flat bread without yeast? Particularly love rye flavor. Have found some packaged rye bread that works, and some millet flax without yeast, but haven't a clue how to make any such thing from scratch. I am trying to avoid wheat whenever possible too, but realize that is a tall order. I will use it sometimes.
