Hey, it's now the end of February (except for you guys in Australia and New

Zealand, who have got a headstart on us all) and time to jump into the kickstart

programme for vegans. Just hit the link below and give it a shot - why not?!!!

It's fun and it's healthy and it helps the animals, the environment, world

hunger and your own health. Besides, vegan food tastes even better :) Trust me!

I am on board. I made the carrot soup twice and the second time I added Thai

chiles which really improved it.

Off to have my vegan waffles!

Anyone else doing the kickstart?

I'm trying it. However, I haven't found some of the items on the grocery list.

So I ate different dishes yesterday and will today. I'm making a trip to whole

foods on thurs so I get the remaining items. Yesterday my family had fajitas

with rice and beans. I substitued baby porta bella mushrooms in my fajitas.

This past weekend I made a 3 bean chili so I'll eat that today with bread.

I also have some okra and tomatoe dish left. I'll fit that in too. Someone

sent in a guacamole recipe and noted that the seed helps keep it green. I

didn't know that. I'll use that recipe going forward.

Sorry this was sooo long.

I am doing it too. I didn't make the soup but did the Hoppin' John Salad with a

side of sauteed kale and mushrooms. I will probably modify/substitute recipes

depending on what I have in the house.

 

The boys (4 and 6) actually asked for seconds of the kale and liked the salad.

I'll also be going through this program. I'm a couple of days behind, though.

With two teenage boys and their after school activities, my grocery shopping is

hit or miss! I didn't get around to shopping for the kickstart till last night.

 

These recipes sound very tasty. The oatmeal this morning was delish! I look

forward to trying the soup recipes -- love soup and salad meals!
