Guest guest Posted March 2, 2010 Report Share Posted March 2, 2010 Chunky Guacamole | 6 ripe, Hass Avocados, seeded and peeled 1/2 onion, chopped 1 large garlic clove, crushed 1 small tomato, diced 6 oz. Monterey Jack cheese, grated 2 green chiles, diced 1/3 cup fresh cilantro, finely chopped 3 Tbsp. fresh lime juice 1 tsp. seasoned salt In a large mixing bowl, coarsely mash avocados, leaving some chunks. Add remaining ingredients and mix to blend. Put one avocado seed in center and refrigerate. The seed will help keep it bright green. Serving Suggestions: Serve with tortilla chips. We love guacamole, but usually make it in small quantities. This'd be great for a group and would be fun to take along to a gathering too.
