I usually serve it around the holidays as it is a treat. But who says you can't treat yourself today! * Died and Gone to Heaven Sweet potatoes * 2 ½ lb. sweet potatoes, peeled, diced into 2†cubes * 1 can (14.5 oz) coconut milk * 1 cup water * ¼ cup brown sugar * 4 T. unsalted butter, melted or use Earth Balance * ¼ cup chopped fresh cilantro * 3 T. fresh ginger, minced * 1 T. jalapeno, seeded, diced * 1 T. fresh lime juice * 1 t. kosher salt Directions Cook sweet potatoes in coconut milk, water and brown sugar for 15-20 minutes or until tender. Mash by hand for a chunky texture, and then stir in the butter. Blend cilantro, ginger, jalapeno and lime juice in a food processor until minced. Scrape bowl periodically. Perhaps for Vegans it should be classified as a dessert. Rice pudding might be good. When i think of stuff going with rice I usually think of a sauce and chunks. Sorry if I've overlooked a message that would explain, but can you tell me why you say 'Perhaps for Vegans it should be classified as a dessert'??? The dish _is_ vegan, provided one uses Earth Balance plus vegan sugar (ie. not filtered through bone char). How do _you_ serve it, by the way? That might help us. As a side dish with other vegetarian foods? I think I would put it with something like baked tofu and some green vegetable and - yes - rice or whatever would be fine on the same plate too Not, I think, to be poured over rice, however - ???? I guess I was thinking along the lines of some of the Asian desserts that are sweet potato or taro based. Also vegetarians can eat treats made with milk and eggs and butter which is the basis of many dishes. I guess I thought the Vegan " Larder " needed some new candidates. We serve it as a side dish, but like I said it tastes so decadent that it could qualify as a dessert.
