Since then I have found another recipe for Tiella that has a yeast crust made with semolina flour. I was curious about this so went searching and found http://chowhound.chow.com/topics/578053 which uses a mix of two flours, half semolina, plus yeast. (No oil - not needed in this kind of dough.) Was the one you found something like this? I like using yeast crusts - avoids the problem of added fats. Other tiella recipes I know don't use a pastry or crust at all but put vegetables such as sliced potatoes or eggplant/aubergine on the bottom, whatever veg 'filling' on top of that, and crumbs as a final topping. I love your idea of using potatoes, brinjals etc. Here is the recipe for the crust that I made. It is from the March 2010 Every Day Food. Olive Oil Crust In a bowl combine 2 ½  cups all purpose flour, 1/3 c. extra virgin olive oil, ½  c. cold water, and ¾ t. coarse salt. Stir with a fork to combine, then turn out onto a work surface and knead 1 minute.
