I have been veg for about 7 years and I have experimented with a lot of dishes that fill me up, feel special for the occasion, but also get eaten by my non veg relatives. My family has two favorites: a wild rice dish (wild rice, dried cranberries, onions, and cashews (the onions sauteed in margerine, then add the cranberries and cashews with a little bit of brown sugar or maple syrup), and my spectacular holiday 'cookies': combine chunky nut butter, maple syrup (for non vegans who hate maple syrup, a friend of mine has tried honey and loves it), and coconut to taste. then add wheat germ and/or oat bran until the mixture is not so sticky and can be easily rolled into little balls. finally, melt some vegan dark chocolate and coat the little balls. refridgerate or freeze until serving.
